Fudgy Sweet potato brownies

We’ve all seen Scooby Doo, you know when him and Shaggy would smell food and hyponotically follow the scent to wherever it was? When you bake these brownies, you will have a whole crowd ready to eat up every single crumb! Baking brownies is one of my favurite things to do. The air just smells so chocolatey and sweet and you just know it’s gonna be good! I love this new culture of baking with vegetables and experimenting with recipes to make them that little bit healthier. I have come up with the perfect recipe for sweet potato brownies, without compromising on taste or texture. These brownies are deliciously chocolatey, fudgy and just everything you need! You have to try them!

Please note to use castor sugar and not brown. The sweet potato adds enough moisture, using brown sugar will only make the batter wetter and the texture won’t be the same.

  • 280g Sweet Potato (This was 1 large sweet potato)
  • 80g/ 1/2 Cup Self Raising Flour
  • 35g/ 1/4 Cup Cocoa Powder
  • 2 Large Eggs (beaten)
  • 40g/ 1/4 Cup Castor Sugar
  • 85ml/ 1/3 Cup Melted Butter
  • 100g/ 1/3 Cup Chocolate Chips/ Chunks
  • 2 Tsp Vanilla Extract
  • 1/2 Tsp Salt
  1. Preheat your oven to 180 degrees C/ 356 degrees F
  2. Boil the sweet potato until tender, this should take 20 to 30 minutes. You can remove the skin before or after boiling, I removed mine after because it easily just peels away without too much effort.
  3. Mash the sweet potato with a fork or a potato masher to that, add the flour, cocoa powder and salt. Mix these together to combine using a whisk.
  4. Add the eggs, melted butter, sugar and vanilla, and combine well.
  5. Now you can add the chocolate chips, (I cut up a bar of milk cooking chocolate).
  6. Mix those in so they are evenly distributed. Pour your batter into a square baking tin ~ 8 by 8 inches.
  7. If you want to be extra, sprinkle more chocolate chips on the top for extra chocolatey goodness. You can never have too much!
  8. Bake at 180 degrees C/ 356 degrees F for 25- 30 minutes.
  9. Allow the brownies to cool for 5/10 minutes once out of the oven then you can take them out of the tin, wait another few minutes and then cut into them. Because they have sweet potato they need this little extra bit of resting time so you can get a nice slice. Don’t worry they will still be warm and perfectly melty for that first bite even after a little cooling.
